Ingredients for Chicken Biryani | Mutton Biryani from Indian Dishes Recipes:
- 1 kg mutton or chicken
- ginger garlic paste say handful
- Spices (Lav, Shaka, clone, zeera etc)
- salt to taste (little more )
- coriander leaves and pudina leaves (washed nicely and handful each ground to paste)
- curd 1 to 1 and half cup
- green chilies 10 to 12 (split in between)
- garam masala (1 tea spoon optional)
- 6 Medium sized onions
- 3 Lemon Juice
Method to prepare Kachi Chicken Biryani / Mutton Biryani from Indian Dishes Recipes:
Wash mutton or chicken nicely, mix all above ingredients together and keep marinating for 1 to 2 hrs. Meanwhile, take 6 medium sized onions slice them long thin and shallow fry them in 1 cup or more oil to golden brown. Be careful that they don’t get dark. Keep the fried onions aside.
For 1 kg of mutton the measure is 1 kg of rice. So wash the rice and cook it with plenty of water and put whole spices like lav,shaka, sha, zeera, clone and add also sufficient salt to the water for the rice.
Once the water starts boiling, see that the rice is half cooked and drain away all the water. Half cooked because you will be cooking it with raw mutton.
Now take the big bowl in which you want to cook biryani, Sprinkle little rice at the bottom and layer the marinated mutton and sprinkle little fried onions over it. then layer with rice again sprinkle with fried onions in between and continue this layering of rice and fried onions until 3 layers of rice are formed over the mutton. At lastly pour a cup of oil (in which onions are fried) over the rice. And 3 lemon juice over it. Now cover it air tight and place over a very low flame for 1 or 2 hrs.
